Fruit Salad

My Favourite Fruit Salad
Yield: 2
Always a winner if you can find good fresh fruit. The Prosecco gives it a twist.
Ingredients:
For the Fruit
1 x handful (small) of blueberries
4 x strawberries, halved
2 x yellow plums, stones removed and cut into eighths
2 x red plums, stones removed and cut into eighths
1 x handful (small) raspberries
1/2 pink grapefruit, segmented and any juice reserved
1/2 orange, segmented
1/2 melon
· For the Syrup
1 x vanilla pod
6 x tbsp sugar
55 ml water
1 x grapefruit juice
· To Assemble
1/4 bottle Prosecco wine, chilled
1 x crème fraiche for serving
· Directions:
To Assemble
Remove the vanilla seeds from the pod and put seeds and pod into a small pan. Add the water and sugar boil to make a syrup and add any grapefruit juice. Put in the fridge until thoroughly chilled.
Toss the prepared fruit in the chilled syrup. Spoon on to plates and pour over the chilled Prosecco. Serve with crème fraiche.
